Abstract

The sugar industry has been a strategic branch of the Mexican economy from colonial times to the present. During its development, it has fulfilled important economic functions, such as producing a basic product, supplying raw materials to other industries, generating direct and indirect employment, serving as a domestic market and providing foreign exchange through exports.
